|| On Spring Break + Summer Rolls ||

Spring Break came early with cold weather, then really warm weather, then cold again (seriously, from 50 to 70 to 20!).  Although there was a lot of (school)work to do, there was plenty of time for Amanda and I to cook some delicious food!  
This recipe for Shrimp Summer Rolls, perfect for Friday meals (or really anytime) was given to me by Amanda's mum, and I want to share it with you!!!  

|| Shrimp Summer Rolls ||

These rolls are delicious!!
|| Ingredients ||

  • 12-15 Medium Shrimp, Peeled & Deveined
  • 1 Package Rice Wrappers
  • 1 Box Rice Noodles
  • 1 Large Carrot, Peeled & Grated
  • 1-2 Scallions, Chopped
  • 2 Cups Shredded Romaine Lettuce
  • Sweet Chili Sauce, Peanut Sauce, anything you want to dip your rolls in!

Split shrimp down the middle lengthwise.  Season shrimp with olive oil, salt and pepper.  Heat up olive oil in a skillet, then lay shrimp in skillet, cooking evenly on both sides, 2 minutes.  Put on a paper towel-lined plate and set aside.
Boil water in a pot and make the rice noodles by removing pot from burner, cooking the noodles 3 minutes, drain and rinse well.  Set aside.
Take a medium-sized pan and fill it halfway with water.  Turn the stove to medium heat, warming up the water just enough to be not-too-hot.  Take the rice wrappers and soak in the pan, softening up until clear.  Transfer to plating station (i.e. a countertop or cutting board or anything that you can lay them out to fill).
After laying out wrapper, take the chopped veggies, shrimp, and rice noodles and place a small amount in the wrapper.  Fold the two smaller end, then roll the wrapper to enclose all the ingredients. Continue until all wrappers are filled, then enjoy with dipping sauce of your choice!
To store, place in a container with parchment paper between each layer, as these rolls get sticky!

Simple, delicious, and easy enough for anyone to make!

|| On Color Inspiration Spring 2017 ||

As spring approaches, there's nothing better than finding color inspiration for the season.  When Pinterest introduced their colors of the season, I knew I had to make an inspiration board based from these wonderful colors.  The chosen colors are: mint & blush. Thankfully, there's a ton of options for these colors, which make me happy since I love, love L-O-V-E these colors!!  

I found the Crosley Cruiser Pink UK Plug Record Player at Urban Outfitters (unfortunately only available in mint, darn).  

The beautiful blush on a front door makes any home-modern or vintage-pop with rosy delight.  

A blush lipstick-such as MAC in Long-Legged & Fabulous-is the perfect swipe to go with your favorite spring dress!  

DesignLoveFest made amazing luggage sets, and the blush is definitely my favorite! As you can see from the photos above, you can take this suitcase on any type of vacation. Thankfully, the suitcase and accessories are still available  

A blush retro telephone is the perfect pink to grace a table or desk.  

Homemade mint ice cream?  Yes, please!  Find the recipe on Chew Out Loud!  

Last but not least, chairs painted in various shades of mint are a great way to spruce up any space needing some sweet color!

|| On La La Land ||

LA LA Land. 
This oscar-winning movie has the colors, the clothes, the beautiful chemistry between Ryan Gosling and Emma Stone. If you haven't seen it yet (even of you have), go experience this modern-day spin, reminiscent on musicals from the past (think Singing in the Rain colors, y'all).
The Clothes
Oh my gosh, the clothes. Emma Stone's character Mia has the dresses that every girl wants. From the now-infamous yellow dress, to the greens, blues & pinks, the technicolor, a-line skirt, modern meets vintage clothing makes any girl swoon (then hit up all the local thrift stores)!

La La Land is a beautiful love story which may not have the happy ending everyone usually hopes for, but it all makes sense when you think about it. What will you really do with your life? Are you willing to sacrifice things for your dreams? Is everything really worth giving up, and will you be happy in the end? There are many times in this film which make you think carefully, and you may cry (I did), laugh, and tap your feet to the wonderful rhythms that are found in LA LA Land. So go see it-it's still in theaters(!)-and enjoy the sights, sounds, and colors that LA LA Land has to offer.
